Spinach cheese samosa
- 1 cup refined oil
- 1 teaspoon salt
- 1/4 cup cheese cubes
- 1/2 tablespoon refined oil
- 1/4 cup all-purpose flour
- 1/2 teaspoon green chili
- 1/2 cup spinach
- water as required
- Step 1 To prepare this delicious recipe, first chop the green chilies. Set aside for further use, then chop the cheese cubes in a bowl.
- Step 2 Next, cut the spinach into thin slices, first chop the spinach and then add boiling water. Wait for the spinach to soften. Once they soften, remove them immediately and place them in ice water. After a minute, drain the water and reserve the hot spinach.
- Step 3 Take a deep bowl and add all-purpose flour, refined oil, and salt. Knead this mixture into a dough with enough water.
- Step 4 Scoop out the dough and scoop out the balls. Press down and shape each ball into a flat circle. Cut the circle horizontally and blend the edges of the two parts of the circle to form a cone structure.
- Step 5 Mix in the blanched spinach and shredded cheese, then add to the prepared cone as a filling. Add some water to the edge and seal the edge to close the samosa. Make the remaining dumplings more samosa.

The Dhokla sandwich is a Gujarat specialty, but it is now very popular in India. There are many types and versions of dhoklas, and they can be made with a combination of chickpea flour, semolina, mixed cereals, lentils, and rice, and more. My family’s favorite snack, which is why I often make different versions.
- 2 cup Rice
- 1 cup Urad daal/White lentil
- 1/4 tsp Citric acid/ Nimbu phool
- 1/4 tsp Soda bi carb
- To Taste Salt
- 1/2 cup Thick Green Chutney
- 2 tsp Cooking Oil
- Tempering/ Tadka
- 3 tsp Cooking Oil
- 1 tsp Mustard Seeds/ Rai
- 1 tsp Sesame Seeds/ Til
- 10 Curry Leaves
- 5 Green Chilies slit
- Pinch Asafoetida/ Hing
- Wash the Ural rice and chives and soak in enough water for 7-8 hours,
- then drain the water, then rinse the Ural rice and daisies with fresh water, grind the Ural rice and chives until you get a smooth paste, like idli dough.
- Pour the oil into it and mix well, then ferment the dough overnight or for 8-9 hours.
- Take 1/4 teaspoon of soda / end, 1 teaspoon of oil and 2 teaspoons of water in a bowl and mix well. Add this mixture to the sourdough, bring it to a boil in a steamer and add water to the dhokla dish.
- When the water starts to boil, pour the dough into 2 greased plates, put these plates in the steamer and cover the pot, steam for 10 minutes at high temperature, remove the plates from the steamer and cook for 2-3 minutes, then put the hot sauce in a dhokla (on the rough side), put another dhokla on top (keep the rough side in the hot sauce) and roll gently.
- Roll the pins so that both layers adhere properly.
- Heat the oil in a small saucepan and add the temperature setting ingredients. When the sesame seeds are golden brown, remove and heat them and add 2 teaspoons of water. Pour this tempera over the dhokla sandwich.
- Cut the dhokla into squares or diamond shapes, garnish with chopped cilantro, and serve.
